[CHILE-PEPPER-RECIPE] Sofrito

This article includes two pages of the story,including how the writer was
dating a Puerto Rican boyfriend whose Mom taught her this. She also
mentions how you personalize it with more heat, etc, according to taste.
She advises adding chopped tomatoes just before serving or they will turn
the mixture into mush. Puerto Ricans, Mexicans, many Latin and Caribbean
countries use a variation on this.


Sofrito

Yield: 4 cups Zest Factor Medium

Since ajicito dulces can be difficult to find, a good substitution would be
half a red or yellow pepper with a drop or two of your favourite habanero
hot sauce.

Once you've nailed the basic recipe, try changing it to suit your taste.

1 bunch cilantro, stems removed
1 large yellow onion, quartered
1 head of garlic, peeled
2 cubanelle peppers
8 ajicito dulce peppers
1 Tblspn dried oregano
1 Tblspn olive oil

In a food processor, combine all ingreidents and process until mostly
smooth, with some chunky bits. Store in the fridge for up to 10 days or
freeze for up to 3 months.
